The calisson’s origins go back to the middle of the 15th century when, during King René d’Anjou’s second marriage with Jeanne de Laval in 1454, the head of the King’s Confectionery served some calissons, thereby bringing a smile to the future Queen who was not reputed to be overly pretty.
Called ‘Calisone’ in Italy and ‘Kalitsournia’ in Greece, the Calisson first appeared in Aix-en-Provence in its modern form around 1473.
There are as many versions as sources of the name ‘Calisson’! However, it is certain that the Canteperdrix Calissons have a delicious almond and fruit taste, and a subtle touch of sugar … Just enough to tempt you!
The calisson is comprised of a smooth mixture of almonds and candied fruits (melon and orange peels). This surprising small white lozenge with a soft core is covered with a delicious royal icing available in different colours.
